Gluten-Free Churro Buttercream Cupcakes

I don't know about you but this quarantine thing has got Cinnamon on my mind, all the dang time. And banana bread, sooooo much banana bread.


Switch it up with this amazing treat, and by amazing I mean probably the best cupcakes I've ever made—or eaten for that matter. And did I mention that they are Gluten-Free? I made these cupcakes to celebrate Cinco de Mayo with my friend who has a gluten allergy.


Now I have to admit, I was skeptical about the gluten-free flour only because I've had GF baked goods before and it tasted different. This GF flour however, proved me oh so wrong. (Shoutout Bob's Red Mill Gluten Free 1-to-1 Baking Flour, seriously guys it's the best!
